  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 2-3 tablespoons oil or ghee
  • 1/2 cup fresh coriander leaves (chopped)
  • Salt to taste
  • 1 cup water (adjust as needed)

Optional Tempering Ingredients:

  • 1 bay leaf
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1 small cinnamon stick
  • 1 teaspoon cumin seeds

Instructions:

  1. Preparation:
  • Clean and wash the mutton pieces thoroughly. Drain the excess water.
  • Puree the tomatoes and set aside.
  • Finely chop the onions and coriander leaves.
  1. Marinating the Mutton:
  • In a large bowl, mix the mutton pieces with yogurt, turmeric powder, and 1 tablespoon ginger-garlic paste.
  • Add salt to taste and 1 tablespoon Abhiruchi Kolhapuri Mutton Masala.
  • Mix well and marinate for at least 1 hour (overnight marination in the refrigerator is ideal for better flavor).
  1. Cooking the Mutton:
  • In a heavy-bottomed pan or pressure cooker, heat the oil or ghee over medium heat.
  • If using, add the tempering ingredients (bay leaf, cloves, cardamom, cinnamon, and cumin seeds) and sauté until fragrant.
  • Add the chopped onions and sauté until they turn golden brown.
  • Add the remaining ginger-garlic paste and sauté for another 2-3 minutes.
  1. Cooking the Masala:
  • Add the tomato puree to the pan and cook until the oil separates from the masala.
  • Add the remaining Abhiruchi Kolhapuri Mutton Masala and mix well.
  1. Adding the Mutton:
  • Add the marinated mutton pieces to the pan and sauté for 5-7 minutes on medium heat, ensuring the mutton is well-coated with the masala.
  • Add water to the pan, enough to cover the mutton pieces.
  • If using a pressure cooker, close the lid and cook on medium heat for about 4-5 whistles or until the mutton is tender.
  • If using a regular pot, cover and cook on low heat until the mutton is tender, stirring occasionally and adding more water if needed.
  1. Final Touch:
  • Once the mutton is cooked and tender, check for seasoning and adjust salt if needed.
  • Add the chopped coriander leaves and mix well.
  • Let the mutton masala simmer for a few more minutes to let the flavors meld.
  1. Serving:
  • Serve the Kolhapuri Mutton Masala hot with steamed rice, roti, naan, or any Indian bread of your choice.
