Ingredients:
- For the Bhaji:
- 4 large potatoes, peeled and cubed
- 2 cups cauliflower florets
- 1 cup green peas
- 2 large onions, finely chopped
- 2 large tomatoes, finely chopped
- 1 green bell pepper, finely chopped
- 1 tbsp ginger-garlic paste
- 2-3 green chilies, finely chopped
- 2 tbsp Abhiruchi Pav Bhaji Masala
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1/4 cup butter
- Salt to taste
- Fresh coriander leaves, chopped
- Lemon wedges for serving
- For the Pav:
- 8 pav buns
- 2-3 tbsp butter
- A pinch of Abhiruchi Pav Bhaji Masala for seasoning

For the Bhaji:
- Prepare the Vegetables:
- In a large pot, boil the potatoes, cauliflower, and peas until they are tender. Drain and mash them coarsely.
- Cook the Bhaji:
- Heat butter in a large pan over medium heat. Add cumin seeds and let them sizzle.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and green chilies, and sauté for another 2-3 minutes.
- Add the finely chopped tomatoes and cook until they turn soft and mushy.
- Add the chopped bell pepper and cook for a few minutes until it softens.
- Add the mashed vegetables to the pan. Mix well and cook for a few minutes.
- Add Abhiruchi Pav Bhaji Masala, red chili powder, turmeric powder, and salt. Mix well and cook for 5-7 minutes, mashing the vegetables further as needed.
- Add a little water if the mixture is too thick and cook until you get a desired consistency.
- Garnish with fresh coriander leaves.
For the Pav:
- Toast the Pav:
- Slice the pav buns horizontally.
- Heat a flat pan or tawa over medium heat. Add butter and a pinch of Abhiruchi Pav Bhaji Masala.
- Place the pav buns on the tawa and toast them until they are golden and crispy on both sides.
Serve:
- Plating:
- Serve the hot bhaji in a bowl, garnished with a dollop of butter and fresh coriander leaves.
- Serve the toasted pav buns on the side, with lemon wedges.
