Ingredients:
For the Misal:
- 1 cup sprouted moth beans (matki)
- 1 large onion (finely chopped)
- 2 tomatoes (finely chopped)
- 1 potato (boiled and diced)
- 1/2 cup mixed sprouts (optional)
- 2-3 tablespoons oil
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies (slit)
- 1/4 teaspoon turmeric powder
- 1-2 tablespoons Abhiruchi Kolhapuri Misal Pav Masala (adjust to taste)
- Salt to taste
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Few curry leaves
- 2 cups water (adjust as needed)
- 1/2 cup fresh coriander leaves (chopped)
For Garnish:
- Farsan (mixed fried snacks)
- Finely chopped onions
- Finely chopped tomatoes
- Chopped coriander leaves
- Lemon wedges
For Serving:
- Pav (soft bread rolls)
Instructions:
- Preparation:
- Clean and wash the sprouted moth beans and mixed sprouts. Boil them until tender but not mushy. Set aside.
- Boil, peel, and dice the potato. Set aside.
- Finely chop the onions, tomatoes, and coriander leaves.
- Making the Misal:
- In a large pan, heat the oil over medium heat.
- Add mustard seeds and let them splutter. Then add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for another 2-3 minutes.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate from the masala.
- Add turmeric powder, Abhiruchi Kolhapuri Misal Pav Masala, and salt. Mix well and cook for 2-3 minutes.
- Add the boiled sprouted beans, mixed sprouts (if using), and diced potato. Mix everything well.
- Add water to the pan and bring it to a boil. Lower the heat and let it simmer for 10-15 minutes, allowing the flavors to meld together.
- Check for seasoning and adjust salt if needed.
- Serving:
- To serve, place a portion of the misal in a bowl.
- Top it with a generous amount of farsan, finely chopped onions, tomatoes, and coriander leaves.
- Serve hot with pav (soft bread rolls) and lemon wedges on the side.
Tips:
- Adjust the spiciness by varying the amount of Abhiruchi Kolhapuri Misal Pav Masala and green chilies according to your taste.
- You can also add a little tamarind pulp or kokum for a tangy flavor.
- Serve the misal pav hot for the best taste and experience.
