Ingredients:
- 500 grams boneless chicken (cut into bite-sized pieces)
- 2 tablespoons Abhiruchi Butter Chicken Masala
- 1 cup yogurt
- 2 tablespoons lemon juice
- 2 tablespoons ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 3 tablespoons butter
- 2 tablespoons oil
- 2 large onions (finely chopped)
- 3 large tomatoes (pureed)
- 1/2 cup heavy cream
- 1/2 cup milk
- 2 tablespoons cashew paste (soak cashews in water and blend to a paste)
- 1 tablespoon dried fenugreek leaves (kasuri methi)
- Fresh coriander leaves (for garnish)
Instructions:
- Marinating the Chicken:
- In a large bowl, mix the yogurt, lemon juice, 1 tablespoon ginger-garlic paste, turmeric powder, red chili powder, and salt.
- Add the chicken pieces to the marinade and coat them well. Let it marinate for at least 1 hour (overnight in the refrigerator is best).
- Cooking the Chicken:
- In a large pan, heat 1 tablespoon butter and 1 tablespoon oil over medium heat.
- Add the marinated chicken pieces and cook until they are about 80% done. Remove the chicken from the pan and set aside.
- Preparing the Butter Chicken Sauce:
- In the same pan, add the remaining butter and oil.
- Add the chopped onions and sauté until they turn golden brown.
- Add the remaining ginger-garlic paste and sauté for another 2-3 minutes.
- Add the Abhiruchi Butter Chicken Masala and sauté for a minute until fragrant.
- Add the tomato puree and cook until the oil separates from the masala.
- Making the Gravy:
- Add the cashew paste to the pan and mix well.
- Add the cream and milk, stirring continuously to avoid curdling.
- Add salt to taste and dried fenugreek leaves (crush them between your palms before adding).
- Combining Chicken and Gravy:
- Add the partially cooked chicken pieces to the gravy.
- Simmer on low heat for about 10-15 minutes until the chicken is fully cooked and tender.
- If the gravy is too thick, you can add a little water to adjust the consistency.
- Final Touch:
- Check for seasoning and adjust salt if needed.
- Garnish with fresh coriander leaves.
- Serving:
- Serve the Butter Chicken hot with naan, roti, or steamed rice.
