Restaurant Style Delicious Butter Chicken

Ingredients:

  • 500 grams boneless chicken (cut into bite-sized pieces)
  • 2 tablespoons Abhiruchi Butter Chicken Masala
  • 1 cup yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 3 tablespoons butter
  • 2 tablespoons oil
  • 2 large onions (finely chopped)
  • 3 large tomatoes (pureed)
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons cashew paste (soak cashews in water and blend to a paste)
  • 1 tablespoon dried fenugreek leaves (kasuri methi)
  • Fresh coriander leaves (for garnish)

Instructions:

  1. Marinating the Chicken:
  • In a large bowl, mix the yogurt, lemon juice, 1 tablespoon ginger-garlic paste, turmeric powder, red chili powder, and salt.
  • Add the chicken pieces to the marinade and coat them well. Let it marinate for at least 1 hour (overnight in the refrigerator is best).
  1. Cooking the Chicken:
  • In a large pan, heat 1 tablespoon butter and 1 tablespoon oil over medium heat.
  • Add the marinated chicken pieces and cook until they are about 80% done. Remove the chicken from the pan and set aside.
  1. Preparing the Butter Chicken Sauce:
  • In the same pan, add the remaining butter and oil.
  • Add the chopped onions and sauté until they turn golden brown.
  • Add the remaining ginger-garlic paste and sauté for another 2-3 minutes.
  • Add the Abhiruchi Butter Chicken Masala and sauté for a minute until fragrant.
  • Add the tomato puree and cook until the oil separates from the masala.
  1. Making the Gravy:
  • Add the cashew paste to the pan and mix well.
  • Add the cream and milk, stirring continuously to avoid curdling.
  • Add salt to taste and dried fenugreek leaves (crush them between your palms before adding).
  1. Combining Chicken and Gravy:
  • Add the partially cooked chicken pieces to the gravy.
  • Simmer on low heat for about 10-15 minutes until the chicken is fully cooked and tender.
  • If the gravy is too thick, you can add a little water to adjust the consistency.
  1. Final Touch:
  • Check for seasoning and adjust salt if needed.
  • Garnish with fresh coriander leaves.
  1. Serving:
  • Serve the Butter Chicken hot with naan, roti, or steamed rice.
