- 500 grams mutton (bone-in pieces)
- 2 large onions (finely chopped)
- 2 tomatoes (pureed)
- 1 cup yogurt
- 2-3 tablespoons Abhiruchi Kolhapuri Mutton Masala
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 2-3 tablespoons oil or ghee
- 1/2 cup fresh coriander leaves (chopped)
- Salt to taste
- 1 cup water (adjust as needed)
Optional Tempering Ingredients:
- 1 bay leaf
- 2-3 cloves
- 2-3 green cardamom pods
- 1 small cinnamon stick
- 1 teaspoon cumin seeds
Instructions:
- Preparation:
- Clean and wash the mutton pieces thoroughly. Drain the excess water.
- Puree the tomatoes and set aside.
- Finely chop the onions and coriander leaves.
- Marinating the Mutton:
- In a large bowl, mix the mutton pieces with yogurt, turmeric powder, and 1 tablespoon ginger-garlic paste.
- Add salt to taste and 1 tablespoon Abhiruchi Kolhapuri Mutton Masala.
- Mix well and marinate for at least 1 hour (overnight marination in the refrigerator is ideal for better flavor).
- Cooking the Mutton:
- In a heavy-bottomed pan or pressure cooker, heat the oil or ghee over medium heat.
- If using, add the tempering ingredients (bay leaf, cloves, cardamom, cinnamon, and cumin seeds) and sauté until fragrant.
- Add the chopped onions and sauté until they turn golden brown.
- Add the remaining ginger-garlic paste and sauté for another 2-3 minutes.
- Cooking the Masala:
- Add the tomato puree to the pan and cook until the oil separates from the masala.
- Add the remaining Abhiruchi Kolhapuri Mutton Masala and mix well.
- Adding the Mutton:
- Add the marinated mutton pieces to the pan and sauté for 5-7 minutes on medium heat, ensuring the mutton is well-coated with the masala.
- Add water to the pan, enough to cover the mutton pieces.
- If using a pressure cooker, close the lid and cook on medium heat for about 4-5 whistles or until the mutton is tender.
- If using a regular pot, cover and cook on low heat until the mutton is tender, stirring occasionally and adding more water if needed.
- Final Touch:
- Once the mutton is cooked and tender, check for seasoning and adjust salt if needed.
- Add the chopped coriander leaves and mix well.
- Let the mutton masala simmer for a few more minutes to let the flavors meld.
- Serving:
- Serve the Kolhapuri Mutton Masala hot with steamed rice, roti, naan, or any Indian bread of your choice.
