Yummy , Spicy & Delicious Pav Bhaji Masala

Ingredients:

  • For the Bhaji:
  • 4 large potatoes, peeled and cubed
  • 2 cups cauliflower florets
  • 1 cup green peas
  • 2 large onions, finely chopped
  • 2 large tomatoes, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2-3 green chilies, finely chopped
  • 2 tbsp Abhiruchi Pav Bhaji Masala
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1/4 cup butter
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Lemon wedges for serving
  • For the Pav:
  • 8 pav buns
  • 2-3 tbsp butter
  • A pinch of Abhiruchi Pav Bhaji Masala for seasoning

Instructions:

For the Bhaji:

  1. Prepare the Vegetables:
  • In a large pot, boil the potatoes, cauliflower, and peas until they are tender. Drain and mash them coarsely.
  1. Cook the Bhaji:
  • Heat butter in a large pan over medium heat. Add cumin seeds and let them sizzle.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Add the ginger-garlic paste and green chilies, and sauté for another 2-3 minutes.
  • Add the finely chopped tomatoes and cook until they turn soft and mushy.
  • Add the chopped bell pepper and cook for a few minutes until it softens.
  • Add the mashed vegetables to the pan. Mix well and cook for a few minutes.
  • Add Abhiruchi Pav Bhaji Masala, red chili powder, turmeric powder, and salt. Mix well and cook for 5-7 minutes, mashing the vegetables further as needed.
  • Add a little water if the mixture is too thick and cook until you get a desired consistency.
  • Garnish with fresh coriander leaves.

For the Pav:

  1. Toast the Pav:
  • Slice the pav buns horizontally.
  • Heat a flat pan or tawa over medium heat. Add butter and a pinch of Abhiruchi Pav Bhaji Masala.
  • Place the pav buns on the tawa and toast them until they are golden and crispy on both sides.

Serve:

  1. Plating:
  • Serve the hot bhaji in a bowl, garnished with a dollop of butter and fresh coriander leaves.
  • Serve the toasted pav buns on the side, with lemon wedges.
